Fennel, Sausage and Rocket Pizza

Purchase pizza dough from your local grocery or pizzeria, or whip up a delicious pizza at home in no time. Just be sure to leave enough time to pop the cork on a bottle of Amista Zinfandel. It goes great with pizza.
  • 1 lb pizza dough
  • 1/3 lb fresh ground fennel sausage (made into balls)
  • 1 can of tomato sauce
  • 8 ozs fresh Buffalo mozzarella
  • 1 handful of Rocket (arugula)
  • virgin olive oil
  • salt and fresh ground pepper to taste

One hour before you want to eat, preheat the oven to its hottest setting, 500-550 F or use a wood fired pizza oven like we have a Amista Vineyards. Dust the dough generously with flour and place on a floured work surface. Gently shape dough into a 10" to 12" round. Arrange dough on a floured pizza pan or baking peel.

Brush olive oil over the dough and spread the tomato sauce over the surface and place sausage balls and chunks of mozzarella on top. Sprinkle some salt and freshly ground pepper on top.

Bake the pizza until the bottom of the crust is crisp and the top is blistered, about 10-12 minutes in oven / 3 minutes in a woodfire pizza oven. Move pizza to a work surface and sprinkle the rocket on top. Slice and serve with a glass of Amista Zinfandel.
