For Dwight's quick Shrimp Fra Diavlo.... it's pretty easy. It is a "quick and easy" spicy shrimp "Italian Stir Fry" kind of meal. Perfect to enjoy with any Amista red wine. We chose the Tres with it's richness, spice, black plum and red currant - drinkable with any meal!
Ingredients
  • 12 extra large shrimp
  • 2 cloves of garlic (crushed)
  • 2 scallions chopped
  • 12 cherry tomatoes... sliced in half
  • 2 tbsps fresh olive oil (1-2tbsp)
  • 3/4 cup shredded or grated parmesan cheese
  • 1 tsp crushed red pepper
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp white pepper (optional)
  • 1/2 cup chopped broccoli (optional
  • 1/2 cup diced red bell pepper
Directions

(Note... as pasta cooking times vary... may need to start heating water for pasta before starting the shrimp as they cook up pretty quickly)

In a large pan, heat olive oil to a medium. Add in shrimp, garlic... season with pepper mix (tsp of crushed red pepper, 1/4 tsp of black pepper and optionally 1/4 tsp of white pepper)...again, this is a "season to taste" recipe! Some folks like it spicier, so season to taste.  If adding broccoli or red peppers, add them into the mix and add 1-2 tablespoons of olive oil. Reduce heat to medium low and let simmer for a 6-7 minutes. Add in sliced tomatoes... cooking them for only a couple minutes. Turn off heat and top with chopped scallions and parmesan cheese... It's now ready to be a "topper" to your favorite pasta. We love it over fettuccini, penne or sometimes with cheese ravioli!
