Tasting Notes
This beauty has aromas of juicy yellow peach, Asian pear, almond blossoms and yellow flowers on the nose. The palate presents juicy stone fruit on the front with great white rock minerality on the finish and a lingering floral note on the palate. Wow. This wine is absolutely stunning.
Vineyard Notes
2022 was another quite warm vintage. We had extremely low rainfall over the winter and spring, which caused for a very small crop. Some frost and hail hit us in April, which further reduced the crop. A very warm summer led to an early harvest as well. However, because of the incredibly low yield, flavors are heightened and absolutely delicious from this vintage. 2022 was another quite warm vintage. A very warm summer led to an early harvest as well. However, because of the incredibly low yield, flavors are heightened and absolutely delicious from this vintage. This comes from our Morningsong Estate Vineyard Clone 4 Chardonnay. We picked this earlier than our pick for our other block of chardonnay in order to maintain the natural acidity and encourage the minerality to persist.
Production Notes
We are so excited to present our first concrete tank fermented and aged Chardonnay. After picking and whole cluster pressing, the juice was moved into a concrete egg for indigenous fermentation. The shape of the egg allowed for natural mixing to occur within the wine which gave great fermentation kinetics. After fermentation, the tank was topped up and then stored for 8 months. At 8 months, we racked the wine off primary lees to a stainless steel tank to rest for 8 weeks before bottling.
Winemaker Notes
This is our second vintage of working with our concrete egg fermenting vessel. After picking and whole cluster pressing, the juice was moved into a concrete egg for indigenous fermentation. The shape of the egg allowed for natural mixing to occur within the wine which gave great fermentation kinetics. After fermentation, the tank was topped up and then stored for 4 months. At 4 months, we racked the wine off primary lees to a stainless steel tank just before bottling.
Food Pairing Notes
This wine compliments foods with salinity very well such as gravlax, oysters, ceviche or an aged parmesan.
