This wine shimmers with the colors of ruby grapefruit. The aromas are fruit driven and bright with lots of tart cherry, lemon zest, garden-fresh strawberry and Creme Brulee, followed with delicate hints of vanilla bean and just baked pie crust. The palate is bright and full of fruit and depth. Raspberry and lemon dominate the front palate and give way to a refreshing and balanced acidity on the finish.
This is our very first vintage of Sparkling Mataró! To create this wine, we broke from our tradition of making sparkling wine and used a slightly different method to create the base wine. We picked Mourvedre grapes for our still wine, de-stemmed them and crushed them at 50%. After 24 hours on the skins, we saigneed 20% from the grapes and used that to make our Sparkling Mataró! It went into two neutral oak barrels to go through primary fermentation and then was moved to stainless steel for a small amount of aging time. It then was tirage bottled and left to ferment again and age for one year. After that, we disgorged it, added 0.8% dosage and now we are releasing it to you! Only 33 cases made, so this is an extremely limited and exclusive production.
