This duo is the perfect pairing to show off two Méthode Champenoise wines from our Estate Morningsong Vineyard. Both wines are grown organically, fermented with native yeast and produced vegan through a low intervention style of winemaking exclusive to Amista Vineyards!
Amista Sparkling Blanc de Blanc Wine
This is the wine that will make you a sparkling lover! Crisp and refreshing, it goes beautifully with light dishes or all on its own. It's also Vicky's favorite! Aromas of apple and pear notes with lemon zest. Great acidity on the end. Go fun and casual and pair with fries or kettle chips, or be bold and go with a traditional pairing of caviar. A wonderful wine to begin a meal, or like our team enjoys, pop a bottle to toast to success at the end of the day.
Amista Sparkling Syrah
We picked our Syrah for sparkling in mid-August to retain bright acidity in the final wine. The grapes were hand harvested and then crushed and left to sit on the skins for about 5.5 hours. We then pressed off skins to a stainless steel tank for settling and then racked off to another tank for fermentation. The fermentation took exactly 30 days and was kept at a temperature of 55 degrees to allow all the aromatics to develop. After fermentation, the wine was settled and allowed to rest for a few months before being bottled with some yeast and a small amount of sugar. The wine went through secondary fermentation in bottle for 15 months before being disgorged. We chose not to add any dosage to this wine to allow the bright and fruity characters shine.
