Amista 2019 Rockpile Cabernet Sauvignon

Amista 2019 Rockpile Cabernet Sauvignon

This wine is a multi-layered tapestry of aromas and flavors, infusing your glass with excitement. Give it a swirl and enjoy the scents of dusty dried rose petals, briar patch, crushed blackberries, sandalwood, black peppercorns, and hints of dried cherry. Then take a sip and savor the delicious fruit followed by dusty, chewy tannins, fruit leather and great balancing acidity on the finish. The wine is drinking beautifully right now and will age quite well over 5-7 more years at minimum.

Wine Profile
Tasting Notes
The aromas are of dusty dried rose petals, briar patch, crushed blackberries, sandalwood, black peppercorns, and hints of dried cherry. The palate is fruit forward and delicious on the front palate, followed by dusty, chewy tannins, fruit leather and great balancing acidity on the finish. The wine is drinking beautifully right now and will age quite well over 5-7 more years at minimum.
Vineyard Notes
Rockpile is such a special appellation. Our Terrazza Vineyard is one of my favorite sites in Sonoma County. It sits in the Rockpile appellation, which is high above the fog line at 1800 feet in elevation and only about 10 miles from the coast as the crow flies. The diurnal temperature difference is slightly less here, which allows for long and even ripening over an extended period of time. Our vineyard sits on a south east facing slope, which protects it from the harsh afternoon sunshine.
Production Notes
Our Rockpile Cabernet Sauvignon was harvested by hand from steeply trellised terrain starting at daybreak. The grapes were hand sorted both in the vineyard and in the winery before being crushed and destemmed to an open top fermentation tank. The grapes were cold soaked for 5 days to extract the maximum amount of flavor, then inoculated and fermented on the skins for 15 days. After being gently pressed off the skins, the wine was moved to 38% new French oak and the remainder to used oak barrels where it completed malolactic fermentation and was racked only once before being bottled.

Our Rockpile Cabernet Sauvignon was harvested by hand from steeply trellised terrain starting at daybreak. The grapes were hand sorted both in the vineyard and in the winery before being crushed and destemmed to an open top fermentation tank. The grapes were cold soaked for 5 days to extract the maximum amount of flavor, then fermented with indigenous yeast on the skins for 19 days. After being gently pressed off the skins, the wine was moved to 38% new French oak and the remainder to used oak barrels where it completed malolactic fermentation and was racked only once in the 22 months before being bottled.
