This sparkling rosé shimmers with the color of cherry blossoms in the glass. Made from 100% Mourvedre, it offers flavors of juicy summer strawberries balanced with crisp acid and a clean finish. It is the perfect choice for bubbles in the backyard with friends and grilled salmon.

Our sparkling wines are hand harvested from our estate vineyards in Healdsburg, California. Winemaker Ashley puts the sparkle in every bottle using the Méthode Champenoise, the process used to make fine French Champagne.

Tasting Notes
The aromatics on this wine are stunning. Bright strawberry, lemon Chantilly, fresh picked red plum, lemon verbena and a hint of bruleed pink grapefruit really jump out on the nose. The palate has juicy summer strawberry notes, followed by a crisp acidity and clean finish. I absolutely love this wine. This will be perfect for bubbles in the backyard with friends or paired with grilled salmon.
Production Notes
100% Mourvedre. This Sparkling Mataró was created using the Méthode Champenoise, which is the traditional method of making Champagne and other sparkling wines.
Winemaker Notes
This is an extra special vintage of Sparkling Mataró. We hand-picked these grapes in the early morning hours and brought them to the winery in bins. From there, Vicky and I foot-treaded each bin to gently crush the grapes and put the juice in contact with the skins. After crushing, we let the juice sit on the skins with lots of dry ice and in the cold room of the winery for 24 hours. From there, we pressed off to tank, settled and then started fermenting at 56 degrees. Fermentation took about 3 weeks. After primary fermentation, the wine was settled and then bottled with a little bit more sugar and yeast for secondary fermentation
